Method

1. In a medium pot over low heat, add the star anise, cinnamon stick, cardamom and cloves, stir until fragrant, about 30 seconds.

2. Add veggie stock, onion, garlic, ginger. Simmer with lid for 20 minutes, then strain and return the liquid back to the pot.

3. Stir the brown sugar, soy sauce and rice vinegar into the broth. Continue simmering until ready to serve.

4. Meanwhile, heat the oil in a sauté pan over medium-high heat. Add the sliced mushrooms and sauté for 5 minutes, remove from heat.

5. 5 mins before serving, stir the veggies into the hot broth so that they can briefly cook.

6. Assemble the pho with garnish into 2 bowls.
