Method

1. Preheat oven to 200 C fan.

2. Place the sweet potatoes on a baking tray, sprinkle with cinnamon, salt & pepper and drizzle with olive oil. Mix and roast in for 15 mins.

3. Put the garlic & onion into a frying pan with a drizzle of oil and a pinch of salt. Cook for 5-10 mins until soft.

4. Add the smoked paprika and black beans to the pan, cook for 10 mins.

5. Squeeze the juice of half of lime into the pan.

6. Blend all the dressing ingredients in a blender with a pinch of salt & pepper.

7. Chop the cherry tomatoes and add to the pan, cook for 2 mins before removing pan from heat.

8. Add the avocado and coriander to the pan and stir everything together.

9. Serve the mixture, serve with lime wedges and top with the dressing.
