So light and fluffy yet vegan pancakes for that lazy long brunch
1. Sift the flour into a mixing bowl and add the sugar, baking powder, salt and cinnamon, mix together.
2. Mash the banana in a bowl and add the coconut oil and mash together. Add the soy milk and vanilla and mix.
3. Heat pan with a little coconut oil until hot, add in some batter for the first pancake, around 1/4 cup of batter at a time.
4. When the pancake starts looking dry with little bubbles on top, flip it over until browned on the other side. Keep flipping and pushing down with spatula until the pancakes are nicely browned and the inside is cooked through.
5. Serve pancakes with sliced bananas (+ berries and coconut yogurt), drizzle with honey/ maple syrup.
